The next time you find yourself craving something sweet but short on time, reach for a box of carrot cake mix and let the magic begin. With just a few simple steps, you can create a dessert that will delight the senses and nourish the soul.

Carrot Cake

  • Perfectly Moist Carrot Cake Box Mix
  • 1 Cup water
  • 1/3 cup vegetable oil
  • 3 eggs

  • 2 (8 ounce) packages cream cheese, at room temperature
  • 1/2 cup granulated sugar
  • 2 teaspoons all-purpose flour
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract

  • 4 tablespoons butter, melted
  • 1 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract

  1. Preheat the oven to 350° F. Line a 9 inch square baking pan with parchment paper.
  2. To prepare the carrot cake, start by mixing melted butter, brown sugar, eggs, and vanilla in a bowl until well combined. Then add flour, baking powder, baking soda, salt, and cinnamon to the mixture and beat it until everything is just combined. Finally, stir in the grated carrots to complete the batter.
  3. To prepare the cheesecake, start by combining the cream cheese, sugar, and flour in a mixing bowl. Beat the mixture together for approximately 3 minutes until it turns into a whipped consistency. Gradually add the eggs, one at a time, ensuring that each egg is fully incorporated into the mixture before adding the next. Add the vanilla and beat the mixture once more until it becomes completely smooth.
  4. To prepare the carrot cake batter, spread about two-thirds of the batter evenly into the prepared pan. Then, pour over two-thirds of the cheesecake batter, and spoon small amounts of the remaining carrot cake batter into the cheesecake layer. Lastly, pour or drizzle over the remaining cheesecake batter. Gently tap the pan against the counter two to three times to remove any air pockets in the cheesecake.
  5. Bake the cake for 45-55 minutes, covering it with foil halfway through cooking to prevent the top from browning. Allow the cake to cool in the pan, then transfer it to the fridge to chill completely for at least 3 hours.
  6. To make the icing, whisk together the butter, powdered sugar, vanilla, and 2 tablespoons of water (or milk) until smooth. If needed, thin the icing with additional water/milk. Drizzle the icing over the bars and let it set for about an hour. After that, you can slice and enjoy the bars! You can store the bars in the fridge for up to 5 days.
