Hello friends! Throwing together breakfast when you are running out the door in the mornings can feel like a daunting task. I know you know that feeling. You probably hear the words every morning, ‘just five more minutes’, ‘one more snooze’, ‘I just won’t have breakfast today.’ If you are anything like me… that doesn’t just happen on Mondays – that happens nearly every day. So let’s talk about this little berry parfait!
To be honest though, the days I get up and actually make breakfast and enjoy the sunrise are my most productive days. They are days that I feel accomplished. So why don’t I get up every morning? Who knows. Well, I kind of know. I love my sleep so much. It was just the other day I was talking to my sister and brother in law and he was saying – nobody likes their morning sleep quite like Abby. It is so true. I love sleeping in the morning especially from the 7-10am hours. Those are the best sleeps.
I digress.
Which will happen a lot, regretfully, or not regretfully. I want this blog to encourage you. To motivate you. To let you know that you are not alone on this journey. Back to the point of the blog post – the fig and berry parfait.
I love this thing! What I love about it.. throw it together. Now yes, mine is styled in a way that makes you not even want to eat it. If that makes you happy – style it like mine. But note: I’m really into this off centered, side-of-the-plate thing lately. I think it elevates the food a bit more.

Fig & Berry Parfait
- Total Time: 5 minutes
Description
Start your morning off right with this super easy and very quick berry parfait!
Ingredients
- 1/2c yogurt, I like greek yogurt
- 1/2c granola
- 1c fruits and berries,
- 1 tbsp flax seed
- 2 tbsp jam, I like strawberry jam
Instructions
- Plate the yogurt and granola together. I find that plating half and half makes a prettier display, if you are just hungry – throw it all together!
- Add in your favorite berries – I chose blackberries, raspberries, figs, and pomegranate arils because it is mid-October and poms and figs are finally in season and I’m loving it!
- Drizzle the jam on top of the berries.
- Sprinkle the flax seed.
- Eat and Enjoy!
