Pumpkin Pop Tart

Ingredients

Crust: 

  • 1 unbaked box of puff pastry

Pumpkin Pie Filling

  • 1c pure pumpkin
  • 1 large egg, room temperature, beaten
  • ¼c brown sugar, packed
  • ½ tsp pumpkin pie spice
  • 1 tbsp whole milk, room temperature

Brown Sugar Cinnamon Glaze

  • 1c brown sugar, packed
  • 3 tbsp whole milk,
  • 1 tbsp cinnamon
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Line 2 baking sheets with parchment paper and set aside.
  2. On a lightly floured surface, roll out the puff pastry and cut into equal rectangles. Transfer the rectangles to the lined baking sheet.
  3. In a medium bowl, combine pumpkin, egg, brown sugar, pumpkin pie spice, and milk. Whisk together until smooth.
  4. Top each rectangle with about 2 tablespoons of the pumpkin mixture, spreading it evenly over the surface. Be sure to leave space around the edges of the dough.
  5. Use a pastry brush or your finger to wet the edges of the filled rectangles with water. Place a second rectangle of dough on top of the filling. Seal the edges together with the handle of a wooden spoon.
  6. Bake 25-30 minutes, or until golden brown. Remove from the oven and let the pop tarts cool for at least 30 minutes before adding the glaze.

Glaze:

  1. In a medium, microwave-safe bowl, combine the brown sugar, milk, and vanilla. Whisk to combine until smooth.
  2. Place the glaze into the microwave and cook for 1-2 minutes so the brown sugar can dissolve.
  3. Drizzle and spread the glaze over the cooled pop tarts.
  4. Add a light sprinkle of pumpkin pie spice over the glaze and let cool before serving.
