I cannot believe that Starbucks has launched their Pumpkin Spice Latte today. I mean it is only August 27!! But that’s not going to stop me from sharing the most epic Pumpkin Grilled Cheese ever!!
It feels like just yesterday we were celebrating Galentine’s Day and now it’s time for the wonderful flavors of fall!! But you do not see this girl complaining! I love love love the fall! Don’t you?
If you are like me… you are ready for the cooler weather, the football season, and the pumpkin everything! I’ve been recipe testing for a couple of weeks now and let me tell you – I’ve got the pumpkin candles, the pumpkin spice soap, the mums are already outside – pumpkin is in full swing.
With today PSL day… I am going to share my favorite pumpkin recipe… a brie and pumpkin grilled cheese! And it is absolutely delicious!
We are going to make this with Sourdough bread, which is the best in my opinion. I did test the recipe with wheat bread and it held up – but there is just something about the goodness of sourdough!

Oh and the best part – it’s ready in minutes and it is super easy! Just three simple steps:

- Butter the bread on both sides.
- Make the sandwich
- Place slices of brie cheese on the bread
- Spread pumpkin on both sides
- PRO TIP: Sprinkle 1 Tsp of both Cinnamon and Brown Sugar in the middle of the sandwich – it complements the brie and the pumpkin and marries them together!
- Close the sandwich and toast!
Last thing to do… Enjoy!! It’s so good and is the perfect introduction to Fall!

Ingredients
- Sourdough Bread
- Slices of Brie Cheese
- Spread of Pumpkin (about 2 TBSP per slice of bread)
- 1 TSP cinnamon
- 1 TSP brown Sugar
- 4 TBSP melted butter
Instructions
- Butter the bread on both sides.
- Make the sandwich
- Place slices of brie cheese on the bread
- Spread pumpkin on both sides
